October is Vegetarian Awareness Month!

I’m not sure if you recall but I gave up meat (minus fish) on my birthday April 1st this year.  I can’t believe it’s been over 6 months that I haven’t had meat.  It’s my understanding I’m considered a Pescatarian but I wanted to talk a bit about being a vegetarian and why I chose to eat this way.  My number one reason was to eat healthier for weight loss plus I had been reading horrific stories of how animals are being treated as they prepare to go to slaughter and since I love animals, I really wanted to try to change my lifestyle.  I wanted to eat less processed foods which means more vegetables, legumes and fruit.  As I said, I am not yet a full vegetarian but I sure feel that I am on my way.  People can really be nasty when it comes to the food choices people make and all I have to say about that is don’t listen to them.  You will know what is right for you when it’s right for you!

I would really like to find a blog, website or book that will really show me more vegetarian options.  I struggle with meal planning when it comes to living a vegetarian lifestyle and would like to find easy meals to make. My hubby has been really great and has come up with wonderful vegetarian meals for me on the fly but I would like more options.  I have been looking around the web for more info and found some good reads this month that I’m happy to share with you.  Please do feel free to comment today and share vegetarianism tips, links, book suggestions, etc.

The Lazy Vegetarian blog looks like a good read and is where I found some of the links I posted above.

I have a lot of reading and learning to do!

Oh and I don’t want to forget that Allison over at the Running With Mascara blog wrote a post on vegetarianism and linked to an article she wrote on the effects of being a vegetarian.

So my question today is,

    I am NOT a vegetarian but enjoy eating meatless meals a LOT. I do have many on my blog. I just made an awesome crockpot meal that was just veggies in a pumpkin sauce that was super duper low calories and all vegetarian. I haven’t posted it yet. My favorite meatless meal lately that is posted is a veggie sandwich with a pesto hummus. Delicious!

    I link some of my posts to Breastfeeding Mom’s Unite who is vegetarian. Also My Sweet and Savory hosts My Meatless Mondays. There are a lot of Meatless Monday hosts, you could google that and see what you come up with.

    As you mentioned in your post, I am a vegetarian. My favorite meals are anything that involve lentils! Lentil soup, dal, curried lentils, etc.! I love how versatile they are and that they fill you up without leaving you hungry an hour later.

      Thank you for the lentil recommendation. I have a bag in the kitchen so I’ll have to look for some recipes. Curried lentils sound good!

    hey angie! thanks for stopping by and soooo jealous you are going to do athens! i have friends doing it this year…so I am contemplating next year because I think it would be incredible.

    fingers swelling, i HEAR YA!! I only have that issue when I walk and noticed it typically happens when I am letting my arms swing down by my sides. So if you are walking with your elbows bent and your arm swing more like a power walk it keeps your hands up so all the blood doesn’t flow down to them

    I’m not a vegetarian either, but as years go by I learn more and more imaginative ways to prepare meatless dishes.

    I recently discovered Darya Pino’s blog https://summertomato.com, and even though she is not a vegetarian, she has great vegetarian recipes. Worth to check.
