Close-up of Pumpkins

I came across a Pumpkin Spice Smoothie recipe and knew I just had to try it. You know I love healthy smoothies so I thought this would be perfect especially now with Fall coming.  Yes, I still drink smoothies in the colder months!

I didn’t follow her exact recipe and added 1/3 cup oatmeal and ice to my smoothie.  My banana wasn’t frozen and oops I added a full scoop of vanilla whey protein powder instead of 1/2 plus I didn’t have any pumpkin pie spice.  Gotta get me some of that!  The pumpkin smoothie tasted great but I should have made it in my regular smoothie maker and not the Magic Bullet blender because there were too many ingredients for it but I managed.  It was definitely a winner and I will make it again.

Now I want to get baking!  Take a look at this pumpkin oatmeal cups recipe from Roni at Green Lite Bites.  Gotta have me some of these too.  It’s too bad hubby doesn’t like pumpkin because it’s really good for you.

What is your favorite pumpkin recipe?
