Tomato and Garlic Egg Frittata Recipe
This is a basic frittata recipe. If you’d like you can also add a little feta cheese and sliced black olives, or maybe a little parmesan and baby spinach, or mushrooms and chives. The combinations are endless. A quick and basic recipe like this one can hit the spot.
Serve with warm whole wheat bread and a side salad for a full meal.
- 2 garlic cloves, peeled and crushed
- 2 tomatoes, diced into small pieces
- 6 organic free-range eggs
- 1 tablespoon olive oil
Place the olive oil in a hot non-stick frying pan. Gently sauté the garlic for approximately 2 minutes, add the tomato and sauté for another minute. Next add the beaten egg and cook over low heat for approximately 5 minutes. Place the pan under a hot grill until the top of the eggs set and is lightly golden. Serve hot or cold.
