I’m going to start doing Menu Plan Monday here on this blog instead of my Angie Rambles personal blog. We basically took a wild guess at what we’ll have this week so here it is.
Monday- Mexican Enchiladas w/ground turkey (It was good! As you can tell, I’m late posting this ha ha)
Tuesday- Soup & Sandwich
Wednesday- Spaghetti w/ground turkey and homemade sauce, biscuits
Thursday- Dinner out
Friday- Bean soup w/turkey sausage
Saturday & Sunday- we always play it by ear

Bean & Sausage soup…do tell how/what is needed to make that.
I have my frozen chicken and veggies in the freezer as well as a dinners worth of turkey&chickpea burgers. Also one greek stuffed pepper that needs thawing out and eating. I’ve got to get a more solid plan going though. Perhaps work will be a little quieter tomorrow and I can do some thinking on it.

Not sure all about the soup because I don’t cook but as we were grocery shopping the other day, I saw bags of beans and got a craving for bean soup so hubs put one of the 15 Bean Soup bags in the cart. Then I looked at it to see exactly what needs to be done and on the bag it mentions a ham hock or sausage so since we have hot turkey sausage, Kevin will use that he said. That’s all I know LOL
I’ll let you know how it turns out and write down what all he does.
Turkey and chickpea burgers sound REALLY good to me. Recipe?

1 15oz can chickpeas
1/2c scallions
1 tsp ground cumin
1 tsp grond pepper
1/4 tsp salt
2 tsp worcester sauce
3/4lb ground turkey
In food processor (or hand buzzer as I did) combine chickpeas, vumin, pepper salt, worcs’, and scallions until smooth.
Transfer chickpea mush to turkey in large mixing bowl and mosh together until combined.
divide into burgers (4) and cook in large non-stick skillet (or you can bake them – I fried mine in a little pam on the stovetop).
they are kinda messy and sticky – but once done. Really very tasty!!
