Colorful Healthy Foods To Eat

March is National Nutrition Month and the theme for 2011 is EAT RIGHT WITH COLOR.  National Nutrition Month® is a nutrition education and information campaign created annually in March by the American Dietetic Association.  You can see my 2010 blog post about it too.  And here is their press release for this  year.

What eat right with color means to me is the more colors on your plate (or in your glass) the better.  Simple as that!

Make it a goal this month and beyond to add more color to each meal.  Here is a list of MY favorite colorful healthy foods to eat.

YELLOW/WHITE

*Mushrooms
*Bananas
*Parsnips (made in to fries!)
*Cauliflower

RED

*Grapes
*Tomatoes
*Red Peppers
*Kidney Beans

ORANGE

*Carrots
*Sweet Potatoes
*Oranges
*Squash

GREEN

*Apple
*Broccoli
*Cucumbers
*Spinach

PURPLE/BLUE/BLACK

*Blackberries
*Blueberries
*Eggplant
*Plums
*Black Beans

    Great list! I would add romaine and cabbage to the green list. And I’m going to add green beans because I just learned that they are a great source of Vitamin K and iron — I’d been treating them as a seasonal vegetable, but I may put them in my winter rotation, too.

      Oh yes can’t forget romaine. Yum! I didn’t know that about green beans. Will have to add more of those for sure.

    I am always telling people to eat a colorful diet, that is the best way to ensure that you are getting plenty of antioxidants. I love throwing spinach, colorful fruits, protein powder, and juice in to my vitamix and knowing that my kids, my husband, and myself are all getting a very healthy boost 🙂
