My goal for last week was to workout at least 5 days. I didn’t accomplish that but I did workout 4 days and those workouts were awesome. So I consider that a win!

What is your goal for this next week?

My goal for this week is to get some sleep! I would like to be in bed no later than 10:30 PM and lights out by 11 PM a couple times this week.

    I kept up with workouts this week & dragged out an old but healthy (old – as in haven’t made this in ages) recipe. This is easy peasy to make but has tons of impact as it looks so different, little paper parcels of fish cooked in own juices and white wine, the veggies make it really colorful. The fish is so flavorsome I serve just with plain rice.

    Salmon En Papillote – Preheat oven to 350F
    Fresh Salmon steaks 8 ozs each
    Veggies you can use whatever have to hand, best sliced thin or julienned (thin strips) I like any or all of the following –
    Red onions, garlic, carrots, yellow squash, zuccini, leeks, snow peas, red-green-yellow peppers
    Lemon or Lime juice
    White wine or dry vermouth – just enough to steam the veggies and create a lite sauce
    Optional:
    tarragon (if you don’t like tarragon try throwing in some Pesto instead)
    salt and pepper
    a knob of butter to make the sauce really rich
    Saute all the veggies together, toss in the lemon juice, white wine and tarragon. Saute for just a few mins to get the veggies semi-soft then allow to cool (just so it doesn’t start cooking the fish if you’re going to cook later – if you’re cooking right now no need to cool).
    Lay out parchment paper (or foil) fold in half, place the salmon at the fold, plop the veggies (and sauce/juices) on top.
    Fold over the paper or foil and starting at one side, roll up the edges tightly to seal in the veggies and juices.
    Bake on a sheet pan or in a shallow sided dish at 350F for about 20-25 mins.
    You can prepare the papillotes ahead of time and keep in the fridge until you’re ready to cook. You can even freeze then bake from frozen they take slightly longer to cook so about 30-45 mins.

    my goal this week is simply to survive…
    ok I have more than that..but that’s the biggie…
    goal is to run 5 days a week and improve on speed

    I have continued my hot lemon water every morning and my commitment to a workout every day!

    I have also joined Jess’s Marathon Weightloss Challenge with an eye to losing 10 pounds, and have been logging and tracking my food – and stocked up the fridge and freezer with REAL food!

    The last seven days have been crazy — with school winding down, burning the midnight oil, and a volleyball tournament I didn’t get in as much fitness as I would have liked.

    On a positive note, I continued to opt for healthier snacks while at my computer like almonds, red bell peppers, blueberries, and raspberries. I was only tempted one time with my new favorite potato chips – Lays Chile Limon (One night I pretty much ate the entire bag while drinking iced coffee and working during the night — thankfully I have a high metabolism, but still, I know that eating almost an entire bag isn’t a healthy choice.

    My goal for the upcoming week is to add-in some new arm isolation exercises.

    P.S. to Debra: The Salmon En Papillote sounds so delish! I’m going to have to try it!

      Kelli,
      I hear you on not getting in as much fitness I would have liked and this week is starting to look the same. BUT I am making the workouts I do count.

      Great job on choosing healthier snacks. I need to start planning out healthy snacks for during the day. I like your ideas a lot.

      Would love to know more about the arm isolation exercises. Ever thought about doing a guest post about it? I would be happy to take one!

    Im new here trying to regain my health plus lose some of the weight I have gained. I have had a very hard 3 years I was told I have RA and put on steroids plus other meds. daily which has really put the weight on plus blew me up like a todd frog. In Aug. last year had to have female surgery well Dr. used mesh and it spred through out my organs and since then have had 4 more surgerys due to the mesh and have been unable to do anything basicly have spent most of my time trying to recover from surgerys, last surgery 4 weeks ago I have no engery or endurance. decided today enough Dr.can not correct problem so Im trying to help myself. Started in the pantry Do not really have diet so I could use some advice I was told last week I have low blood sugar and need low carb way of eating and eat every 2-3 hours I have bought protein powder and unsweetened almond milk was thinking that would be good for inbetween meals like I said can use help Thanks in advance
